ULTIMATE SCRAMBLE
(serving up to 6 people)
7 eggs (yolks of 4)
1/2 Soyrizo package (comes in vegetarian section of store near tofu)
1/2 onion
1 broccoli crown
1/2 c cooked black beans
1/2 c Parsley leaves
4 garlic cloves
1 tbs cumin
1 tsp cayenne pepper
1 tsp chili powder
1/4 c cilantro
3 slices vegetarian or vegan cheese
2 tbs coconut, olive or grapeseed oil
so tasty!! save the leftovers. High in protein, fiber and nothing but good stuff!! Also low in sodium and contains lots of flavor!!! Enjoy:) You could even top it off with some avocado
